Our olive oil tasting is much more than trying different EVOOs. It’s a guided sensory journey led by expert tasters who will teach you how to detect fruity, herbaceous, pungent, and bitter notes in an enjoyable, easy-going way.

Each participant receives a professional tasting kit including:

  • A selection of 5 premium extra virgin olive oils
  • Artisan bread for palate cleansing

The experience lasts around 60 minutes, alternating tasting with short educational monologues about the world of olive oil. You’ll learn the history of EVOO, how it’s produced, how it’s tasted professionally, and why Spain is the world’s leading olive oil producer. All of it with humour and a down-to-earth approach that makes even total beginners feel like seasoned tasters.

What Is an EVOO Tasting and How Does It Work?

An olive oil tasting is a structured sensory evaluation focused on the organoleptic characteristics of EVOO: colour, aroma, flavour, and texture. Unlike simply “trying” an oil, a professional tasting follows a specific protocol that lets you identify the quality and unique character of each sample.

The Three Phases of a Professional Olive Oil Tasting

Visual Phase

We observe the colour of the oil, which can range from intense green to golden yellow. Although colour doesn’t determine quality, it gives us clues about the olive variety and the moment of harvest.

Olfactory Phase

We warm the oil in the cup with our hands and inhale deeply. This is where we pick up fruity attributes (fresh grass, tomato, banana, apple) that point to the freshness and variety of the EVOO.

Gustatory Phase

We take a small sip and spread it across the mouth, drawing air in to oxygenate the oil. This is how we identify the three key positive attributes: fruitiness, bitterness, and pungency. Yes, that tingle at the back of your throat is a sign of quality, not a defect.

How to Spot a Quality Olive Oil

A quality extra virgin olive oil should present:

  • Intense, fresh fruity aromas
  • No defects whatsoever (rancid, fusty, winey)
  • Balance between bitter and pungent
  • Persistence on the palate after swallowing

During our olive oil tasting, we teach you to spot these attributes and to tell a premium EVOO from a mediocre one. You’ll also learn to identify common defects and to read labels properly.

Positive Attributes and Defects in EVOO

The positive attributes we look for are: fruitiness (green or ripe), bitterness (from the green olive), and pungency (from antioxidant polyphenols). These three elements indicate a fresh, high-quality oil with healthy properties.

The defects we want to avoid include: winey-vinegary, musty-humid, rancid, fusty, or metallic. An oil with any of these defects cannot be labelled as extra virgin — although, unfortunately, some still make it onto the shelves.

Olive Oils You’ll Taste: Varieties and Origins

Spain is the world’s largest producer of olive oil, with more than 260 olive varieties. In our tastings we select 5 EVOOs that showcase the diversity of Spanish olive growing:

Picual (Jaén)

The most iconic of Spain, with a strong personality — marked herbaceous notes, pronounced bitterness and pungency. Perfect for bruschetta and sofritos. Its high polyphenol content makes it especially stable.

Arbequina (Catalonia / Aragon)

Smooth and sweet, with fruity aromas of apple and banana. A great entry point for people new to quality EVOO. Perfect for baking, mayonnaise, and delicate fish.

Hojiblanca (Málaga / Córdoba)

Balanced and elegant, with herbaceous and fruity notes. Light pungency and bitterness. Versatile across all kinds of dishes. Its name comes from the whitish underside of its leaves.

Cornicabra (Toledo / Ciudad Real)

An oil with body — intensely fruity with green apple notes. Good balance between bitterness and pungency. Excellent for stews and meats.

5.

Empeltre (Aragon)

Smooth and sweet, with hints of almond and almost no bitterness. Highly valued for dressings and dishes where you don’t want the oil to dominate.

Single-Variety Oils vs. Coupage

During the tasting we explain the difference between single-variety oils (one type of olive) and coupages (a blend of varieties). Both have their place: single-variety oils express the unique personality of each cultivar, while coupages aim for balance and complexity by combining the best of each.

Spain’s Most Prestigious Designations of Origin

Spain has more than 30 Protected Designations of Origin (PDO) for olive oil. In our tastings we include oils from recognised designations such as Priego de Córdoba, Baena, Sierra Mágina, Siurana, Les Garrigues, Sierra de Segura, and Aceite de Mallorca. Each PDO has unique characteristics shaped by variety, climate, and terroir.
